It is produced from cooked white grape must with addition of white wine vinegar. White grape must is cooked under vacuum to preserve the clear colour. It is aged in Oak barrels that give the typical straw yellow colour.
Its main characteristic is the sweet and vanilla taste. Perfect on “white” dishes and with fish & seafood, mixed salads, soups, white meat, carpaccio, tender cheeses….
